You made such a darling "snooty girl" in your play at the cabin. Your eyes were just sparkling as you pretended to not like the other girs. You did great!!

Look at those hardworking women while everyone else was out rafting! Looks like they were having WAY too much fun cooking, if you ask me! ;)

Krislee's Strawberry and Feta Green Salad

As promised . . . We all had a great time. Thanks for such an enjoyable reunion, everyone!

1 cup slivered almonds (carmelized in white sugar-optional)
2 cloves garlic, minced
1 teaspoon honey
1 teaspoon Dijon mustard
1/4 cup raspberry vinegar
2 tablespoons balsamic vinegar
2 tablespoons brown sugar
1 cup vegetable oil
1 head romaine lettuce, torn
1 pint fresh strawberries, sliced
1 cup crumbled feta cheese



In a skillet over medium-high heat, cook the almonds, stirring frequently, until lightly toasted. (sprinkle about 1/2 cup sugar if carmelizing) Remove from heat, and set aside.
In a bowl, prepare the dressing by whisking together the garlic, honey, Dijon mustard, raspberry vinegar, balsamic vinegar, brown sugar, and vegetable oil.
In a large bowl, toss together the toasted (or carmelized) almonds, romaine lettuce, strawberries, and feta cheese. Cover with the dressing mixture, and toss to serve.

You will probably have extra dressing, but just use it on any other yummy green salad for later!

Krislee's Lasagna

INGREDIENTS:

  • 1 pound sweet Italian sausage
  • 3/4 pound lean ground beef
  • 1/2 cup minced onion
  • 2 cloves garlic, crushed
  • 1 (28 ounce) can crushed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 2 (6.5 ounce) cans canned tomato sauce
  • 1/2 cup water
  • 2 tablespoons white sugar
  • 1 1/2 teaspoons Herbes De Provence (optional)
  • 1 1/2 teaspoons dried basil leaves
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon Italian seasoning
  • 1 tablespoon salt
  • 1/4 teaspoon ground black pepper
  • 4 tablespoons chopped fresh parsley
  • 12 lasagna noodles
  • 16 ounces ricotta cheese
  • 1 egg
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3/4 pound mozzarella cheese, sliced
  • 3/4 cup grated Parmesan cheese
  • DIRECTIONS:


    In a large frying pan, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
    Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. Lay noodles flat on parchment or wax paper. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, 1 teaspoon nutmeg and 1/2 teaspoon salt.


    Preheat oven to 375 degrees F (190 degrees C).


    To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.


    Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

    Tip: Try placing the lasagna in the refrigerator overnight to let the seasonings soak into the whole lasagna.

    Montana


    When we went to yellow stone we visited two new states Wyoming and Montana.
    I got this picture of google becuase we never got a picture of it, but we did go there.

    Thanks for coming to the reunion!

    I hope everyone had a great time. It was wonderful to be with all of my family and spending a few days together to strengthen family ties. Hopefully we will be able to go back next year.

    Rachael's Pudding Salad

    Rachael's Pudding Salad

    1 cup sour cream
    1 8 oz. Cool Whip
    Sm. instant vanilla pudding

    Mix above with a little milk.

    1 can mandarin oranges, drained
    1 can pineapple tidbits, drained
    1 1/2 apples, chopped
    1 banana, sliced
    1 cup grapes, halved

    Mix all together.

    Add fudge stripe cookies.

    This was so cool and refreshing Rachael.
